  • Trust the thermometer, not the clock. Cooking time varies with heat, pan size, and humidity; the temperature does not lie.

  1. Combine the sugar, water, and corn syrup in the heavy-bottomed pan. Stir over medium heat until the sugar dissolves.
  2. Clip on the candy thermometer, stop stirring, and bring the syrup to a boil.
  3. Let it boil undisturbed, watching the temperature climb. Swirl the pan gently if you want to keep the heat even.
  4. As the syrup approaches the hard-crack range, set out your parchment, moulds, or pouring surface so you are ready.
  5. When the thermometer hits the recipe’s target, take the pan off the heat. If the recipe calls for it, add the flavouring and stir in now.
  6. Pour the syrup into moulds or onto the parchment, and let it cool completely before handling. Hard candy takes a while to set, so resist touching it.

The batch is done when the candy is fully hard and you can snap a piece cleanly. If it is still soft or sticky, it did not reach the right temperature — that is the main lesson of the first session, and it is easy to fix next time.

First Month

Repeat the same hard candy recipe a couple of times so the temperature-to-texture relationship becomes instinctive, then move to a second stage. A natural next step is toffee or caramel, which uses the same pan and thermometer but a higher temperature and a different pour. Keep notes on the actual temperature you hit, the pan you used, the heat setting, and how the candy turned out, because your stove and pan will behave slightly differently from the recipe’s. Once one stage feels predictable, try a different one — fudge for soft ball, brittle for hard crack — rather than adding more variations of the same candy.

The main hazard is the hot syrup itself. Sugar syrup at candy temperatures is far hotter than boiling water and causes serious, deep burns if it splashes on skin. Work carefully:

  • Keep the area clear and keep children and pets well away while you work.
  • Lift the pan by both handles when pouring, and pour away from your body.
  • Wear long sleeves and consider oven mitts when handling the hot pan.
  • Never taste the syrup directly from the pan. Test a drop in cold water instead.
  • Let the candy cool completely before handling it, and be careful of hot surfaces and tools.

People with limited mobility or grip strength can manage the hobby by using a stable, heavy pan, a reliable clip-on thermometer, and pre-prepared pouring surfaces, so the quick moments of the process are as safe and unhurried as possible.
